Well here is my tree. I bought it as a full size tree from a nursery in Melbourne.
I then removed any large roots and reduced the root ball.

I then choose a leader and cut in on an angle to produce taper and then let it grown out.

This was an idea I had for the tree originally but happy to go with what ever you think Grant.

Great thread of photos Josh; It has come a long way.
The selected apex looks strong enough to go with and we could leave the sacrifice portion on while the rest of the work is taking place.
A view of the roots would be good to get an idea of whats down there and any possible angle changes. I don't have software for Virts so I may do sketches or maybe I should get some software.

I cleaned the dirt from the base and found the pot full of very fine fibrous roots. I would need to some what bare root it to see the base properly, which I assume you don't want me to do.

Hi Josh,
Going back to the original photos of the original root trim I can see a number of heavier roots that are now slightly buried under new but fine root growth. I would not bare root the tree but I would go down a little further to find them. These heavier roots will need to be eventually exposed and get some nice barking up on them so you might as well do it now.
Once you have exposed the top of a number of them STOP and give it a good water; this will expose them and wash the soil off them and down into the pot. You will then see the root system uncluttered but safely.

First you could do a light scissor trim of the light roots on the surface. Makes the roots system look too young.
Emphasize and expose the older roots and let weather/

Could you then do a photo about 1/3rd to the right of the red peg. (Between the red and yellow peg)
We could possibly do a major carve out of the trunk from that angle to achieve either your twin split design or treat as a single tree with resprouting multiple trunks.
