does anyone know anywhere around western sydney where i could collect wild olives, privet etc as i'm interested in going on a dig, preferably around the nepean area. any help would be appreciated.

They pretty much grow uncontrollably around there.
Don't know any specific places, but I'm sure you'd have little trouble convincing any locals/farmers to let you remove some.

On the Hume hwy, Campbeltown exit, and towards the south for the next 20km.
This area is thick with wild olive.

No need for great technique - just mattock round the top to break the surface roots, tug on the top to snap any deep roots, then chop the roots hard and bring the top down so it fits in your car. At home, wash the dirt off the roots and use the chainsaw to deal with the remaining roots - see dugzbonsai site to see how ruthless you can be and how to keep the stump alive minus any roots.

Privet grows everywhere along the river between Penrith & Richmond and everywhere up through Nth Richmond to Kurrajong Heights.
A good spot is behind the quarry opposite the Rowing lakes, there is an old trail that starts next to the Sake brewery, turn north and it's a short walk.
If your from out this way you will know where I mean.....but I didn't tell you dig anything
