Wild fruiting trees... What to do?

Driving round the country side, I've now seen on some lonely verges and back roads a whole range of wild fruit trees, via their many blossoms.
Should i cut them 'lowish' now and get ready for the winter to lift them?
Is air layering the preferable way to go?
Should I be doing other things in these spring summer months to prepare them for lifting?
