very interesting topic, watering give me headache on my start with bonsai 4 years ago i lost very nice trees because of watering then i start doing researches about the watering and actually no one can specifically tell you because no one can, it just comes with experience. now i have same issue with my maples because when i reported them last year i did not change all the soil now they are too wet "as you said holding too much water" and the leafs same as yours so im just waiting till winter to fully repot them.

When you slip pot it you could poke a chopstick through the root bound mix to help with aeration temporarily until the time when you could do a proper root prune.

Yeah pebble, have done exactly that so just counting down now until its time to do the full root prune and repot it
