What do u use to spray plants to stop grasshoppers eating leaves

I nuke them with Rogor.
It also obliterates any other pests that may be lurking at the same time.

What does it do to the spiders, lady bugs, stick insects and other none pest species. I can understand you want to protect your trees but I would rather have a bit of damage than nuke all insects.

When grasshoppers hit where I live, they come in large numbers, and multiply ..... I have had trees fully stripped of foliage.
There is no such thing as a "bit" of damage.

I thought that might be your reason, grasshopper damage around here is not so bad and doesn't need the approach you choose. Do what is best in each individual scenario.
